Prosciutto Class

For the last two years my husband and I have been making our own prosciutto. The class is taught by a wonderful Italian family.  We have such a great time with everyone, I feel, for a moment, that I am Italian.

Here is the prime piece of pork we are given.

Then it is trimmed and salted for curing.

I can't wait for this fall to taste it!
