Personal Chef Recipe Testing 12-2013

Last night at 7:30 my husband tells me he needs a dish for his department holiday party on Thursday.  He only had two demands; it must be something that can sit out most of the day (and still taste great) and require no cooking by him.

Of course, without missing a beat, I said, "Take a bag of chips."  He replied, "But you're a chef and everyone at works knows it, so it has to be really good."  I smiled and said, "How about roasted cinnamon almonds?"  He said "That would be perfect!"

They are so good that I may have to make more because I can't stop eating them!!

Personal Chef Recipe Testing 11-2013

I am very excited today, because I made a real gluten-free loaf of bread!  My sister told me she has a friend who was making her own gluten-free bread at home and it was delicious.  I had to know her secret.

Come to find out, she was using King Arthur Flour Gluten-free Bread Mix.  Now I am very leery about making anything from a box, because I would rather make it from scratch, which is just how I am.  But King Arthur Flour has converted me.

What a beautiful loaf of bread.  Thank you King Arthur Flour!

Personal Chef Recipe Testing 10-2013

Last week, I started thinking about Christmas goodies that I make for my clients.  I know what you’re thinking, but I like to plan ahead.

This year some of my treats are going to have to be different since a few of my clients have a gluten allergy.  I have been testing various gluten-free flours and products to see what the best for baking is.  As it turns out, my client's favorite new cookie doesn't even have flour in the recipe.

Flour-less Cinnamon Pecan & Walnut Cookies

This recipe is so versatile, that you can use allspice or apple pie spice, or cardamom.  They were all delicious!  Next, I am doing to dip them into vanilla white chocolate!

Everything tastes better dipped in chocolate, right?

Personal Chef Cook Day 01-29-2013

I almost cancelled this cook day because the night before we had an ice storm.  The next morning the roads were okay to drive, so I decided not to disappoint my client and head out. 

When I got to my clients house, her driveway and stairs were covered in ice.  I had to crawl up the stairs so I wouldn't fall just to get to her garage.  But, I made it and the food turned out so good!

Birthday Dinner Party 09-29-12

I can't believe I forgot to blog about this dinner party.  

It was an elegant dinner party with ten friends.  His wife and I planned every detail from appetizers to dessert to be made especially for his tastes.  He was blown away by how every dish was prepared just for him.  And I know they all loved the meal, because I had to serve seconds!

Happy Memorial Day!  To all the veterans, THANK YOU FOR YOUR SERVICE. I can't believe it's May 27!  Time is fleeting by too fast. ...
