Personal Chef Cook Day 05-04-11

I enjoyed making these meals because of all the great favors.  Pork, shrimp and roasted vegetables (YUM!).  My client has requested at least one meal be meatless.  So, I have been testing vegan and vegetarian recipes to make sure the meat lovers in her family would approve.

Vegan Roasted Vegetable Lasagna

And, yes, the meat lovers approved.
